Walnut Bread with Zucchini - the best!

How to Make Quick and Easy Zucchini Nut or Walnut Bread? Well - it couldn't be easier.

Besides ease of preparation, this is the best and the easiest way ever to get my kids to eat zucchini. It has a great texture, flavor and can be held in your hand with a napkin to give relative ease of eating.

Walnuts may be substituted for pecans or any other nuts (except maybe peanuts, they are too salty).

The ingredients are economical and the whole thing takes at most an hour to prepare.

Healthy Recipes are Golden!

Here is the Zucchini Recipe:

Combine and mix together in a large bowl:

3 cups all purpose flour,

1 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

3 tsp. ground cinnamon

In a separate bowl, combine

3 eggs, well - beaten

1 cup vegetable oil

2-1/4 c. white sugar

3 t. vanilla extract

2 c. grated zucchini, undrained

1 c. sorted (for shells) and chopped walnuts


Make a well in the large bowl and add the moist ingredients into the center, mixing very well.

Bake 40-60 minutes at 325 degrees F. or 165 degrees C. If I make it in two smaller pans, it seems to take less time than if I combine it into one large round pan.

As it bakes, it may develop a crack in the top. That is fine.

After checking for doneness, let it cool in the pan 20 minutes and then remove on a rack.

This bread freezes well. Ideally you can eat one loaf now and place the second in the freezer for later!

The tiny green zucchini pieces in the bread give roughage and texture as well as flavor.

Ahh, nothing beats Zucchini bread! Great recipe. Very easy to follow and with those ingredients, you're bound to have great loaves. Instead of nuts, I top mine with rolled oats.

We love zucchini bread. I have to make a batch at least once a week. I froze shredded zucchini this year from out garden so I would have enough until we can grow it again.

I have never heard of zucchini bread, but this sounds delicious. I will have to try it. The zucchinis will be prolific soon.

Yes, it really is. I never would have put zucchini with cinnamon, but it's a great combination for a nut bread. When you try it, I'd love to hear how it turned out. Mine is usually a little crunchy on top. Have a great day, and thanks for commenting.
